Ingredients
1 x 250g SunRice Jasmine Rice in 90 seconds
1 x 250g SunRice Medium Grain Brown Rice in 90 seconds
1 tblspn olive or peanut oil
500g chicken breast, chopped
1 egg
3 eshallots, chopped
3 cups bean sprouts
2 tspn minced ginger
2 tspn minced garlic
1 tspn minced chilli (optional)
Soy Sauce
Instructions
- Cook rice as per directions on pack.
- Heat oil in wok or frying pan and swirl oil around to cover it. Fry chicken in oil until brown. Remove and set aside.
- Add egg to wok and use a spatula to scramble the egg. Once scrambled remove and set aside.
- Toss eshallots and bean sprouts into the wok and add ginger, garlic, and chilli. Stir fry until mixed.
- Add chicken and both cooked rices back into the pan and mix through with other ingredients.
- Add soy sauce to taste and serve!
Variations
- Substitute chopped shaved ham or chicken for the chicken breasts.
