Ingredients

1 cup SunRice medium grain white rice
500g salmon, cooked and flaked
3 hard boiled eggs, chopped
125g melted butter
1 tab chopped parsley
1 small onion, chopped
250g sliced mushrooms
2 sheets puff pastry
milk to glaze pastry
salt, pepper

Instructions

1. Place flaked salmon into a bowl, together with the chopped eggs, 1/2 melted butter and parsley.

2. Saute onion and mushrooms in remaining butter.

3. Add to bowl with the boiled rice.

4. Mix and season.

5. Line dish with puff pastry, fill with mix then top with another sheet of pastry.

6. Glaze with some milk. Cook at 180 degrees for 35 mins until golden.

Variations

You can substitute the salmon with tinned tuna
