Ingredients

2 cups cooked SunRice Medium Grain White Rice
3 eggs, lightly beaten
1/3 cup caster sugar
1 tspn vanilla essence
1 1/2 cups milk
410g can halved apricots
Cinnamon to sprinkle over the top

Instructions

  • Preheat oven to 180 degrees C.
  • Grease a 6 cup baking dish.
  • Place eggs, sugar and vanilla into a bowl. Whisk until combined. Add rice and milk and pour into baking dish.
  • Place dish into a baking pan with enough boiling water to come 1/2 way up the sides.
  • Bake for 20 minutes. Remove from oven and top with sliced fruit. Sprinkle with sugar.
  • Reduce oven to 150 degrees C and bake or another 20-25 minutes or until set.
  • Serve warm with cream if desired.

Tips

  • Gently move baked rice to see if set.

Variations

  • Also delicious with peaches or mangoes but any fruit is suitable.
  • You can sprinkle with cinnamon or nutmeg if preferred.

very nice without the fruit .after baked ,cut in squares ,in pan ,pour cream over top put back into oven ,bake til the cream boils .very nice desert.
