Ingredients

1 can black beans
1 cup cooked rice
1 onion chopped
2 tblspn of salsa
1 egg, beaten

Instructions

  • Cook the rice as directed on packet.
  • Mash the beans well and mix with the onions, rice, egg and salsa.
  • Spray a pan with cooking oil and spoon half a cup of mixture onto the pan.
  • Flatten and cook for 4-5 minutes on each side.

Tips

  • Brown rice can be an option.
