Ingredients
- 2 x 250g SunRice Arborio Risotto Rice in 10 minutes
- 2 tblspn olive oil
- 1 onion finely chopped
- 4 rashers smoked rindless bacon (diced)
- 2 cups fresh broccoli cut into small rosettes
- 2 cups hot chicken stock
- 6 tblspn grated parmesan cheese
- 2 tblspn light sour cream
- salt and pepper to taste
- additional parmesan to sprinkle on top
Instructions
Heat oil in a saucepan, add onion, bacon and cook gently for one minute. Add broccoli, stir and cook gently for two minutes. Microwave SunRice Arborio Risotto Rice in 10 minutes. Add rice and cook for a further two minutes, stirring until rice is well coated and glossy. Add 1 cup of stock, stirring until absorbed before adding another cup of stock, stir until rice is just tender, adding more stock if required. Stir in sour cream, parmesan cheese and season to taste.
Tips
Replace broccoli with cauliflower and parmesan with grated Swiss cheese or cheddar.

I seem to have trouble with my risotto's on the stovetop so could this recipe be converted to cook in microwave completely?
