Ingredients
1 cup cooked brown rice
1/3 cup dried fruit
4 eggs
1/3 cup sugar
600ml milk
1 teaspoon cinnamon
1 teaspoon nutmeg
Instructions
1. Place rice in base of casserole dish. Spread fruit over rice.
2. Whisk together eggs and sugar. Add milk and mix. Pour over rice and fruit. Add spices.
3. Place casserole dish in a baking dish with enough warm water to reach halfway up the sides of the dish.
4. Bake for about 30 minutes until centre is firm.
