Ingredients

  • 1/2 cup (100g) SunRice Brown Long Grain Rice
  • 1 medium carrot, diced
  • 500g tomato pasta sauce
  • 2 cups chicken stock
  • 200g green beans, sliced
  • 300g can cannelloni or butter beans, washed and drained
  • 1 tblspn chilli sauce
  • 1/2 cup shaved parmesan cheese (optional)

Instructions

Combine rice, carrot, pasta sauce and stock in a large saucepan. Cover, bring to the boil, reduce heat to medium and simmer for 30 minutes or until rice is cooked. Stir through beans, cannelloni beans and chilli sauce and allow to heat through. Garnish with parmesan cheese (optional) and serve.

I have used this as a basic recipe, also using a tin of tomato instead of the puree. I love using lots of celery including the leaves and do the veges according to what I have. So cheap, quick and easy and great for winter lunches at work

This recipe is really simple. I used a can of tomato soup & can of diced tomato instead of the pasta sauce (added a few herbs), and used frozen mixed veg as didnt have any carrots, but turned out excellent!
