Ingredients
- 1 250g packet SunRice Roasted Vegetable brown rice
- 2 tablespoons cooking oil
- 1 large onion, finely chopped
- 2 teaspoons turmeric
- 2 teaspoons dried oregano
- 1 red capsicum, finely chopped
- 1 zucchini, thinly sliced
- 3 1/2 cups vegetable stock
- 1 cup frozen pea�s
- 50g baby spinach leaves
- 2 tablespoons freshly grated parmesan
Instructions
- Heat oil in a large non-stick saucepan or frying pan.
- Add onion, turmeric, oregano, capsicum and zucchini
- Cook until vegetables are soft, approximately 3-5 minutes. Add rice, cook and stir for 1 minute.
- Add stock and bring to the boil. Cover and reduce heat to a simmer and simmer until all the liquid is absorbed.
- Stir in peas and spinach. Cover, cook 2 minutes more. Stir in cheese.
- Serve
Variations
You could add prawns or chicken to this dish. Allow about 150g per person.
