Ingredients
- 1 x 450g packet SunRice Roast Flavoured Chicken Rice in 2½ minutes
- 1 red onion, sliced
- 2 cloves garlic, chopped
- 1 red capsicum, sliced
- 500g chicken breast, thin sliced strips
- 2 tsp Cajun spice
- 1 tsp smoked paprika
- 1 cup low salt chicken stock
- ½ cup crushed tomatoes
- 150g tin sweet corn kernels
- 2 tbsp coriander, chopped
- Lemon and coriander to garnish
Instructions
- Sauté onion, garlic and capsicum in oil over medium heat for 2 minutes
- Add the chicken and saute until brown
- Microwave rice as per pack instructions
- Stir in rice to pan followed by Cajun spice, paprika, stock, tomatoes and corn
- Cook for 2-3 minutes until hot and chicken is cooked. Add chopped coriander, stir through and serve meal
