Ingredients

  • 1 x 450g packet SunRice Roast Flavoured Chicken Rice in 2½ minutes
  • 1 red onion, sliced
  • 2 cloves garlic, chopped
  • 1 red capsicum, sliced
  • 500g chicken breast, thin sliced strips
  • 2 tsp Cajun spice
  • 1 tsp smoked paprika
  • 1 cup low salt chicken stock
  • ½ cup crushed tomatoes
  • 150g tin sweet corn kernels
  • 2 tbsp coriander, chopped
  • Lemon and coriander to garnish

Instructions

  • Sauté onion, garlic and capsicum in oil over medium heat for 2 minutes
  • Add the chicken and saute until brown
  • Microwave rice as per pack instructions
  • Stir in rice to pan followed by Cajun spice, paprika, stock, tomatoes and corn
  • Cook for 2-3 minutes until hot and chicken is cooked. Add chopped coriander, stir through and serve meal
