Ingredients
1 cup cooked & cooled SunRice Long Grain White Rice
3 tblspn soy sauce
1 tblspn sesame oil
1 tblspn lemon juice
1/2 tspn caster sugar
1/4 tspn ground black pepper
2 tspn grated fresh ginger
1 clove garlic, minced
1/2 red capsicum, diced
1/2 green capsicum, diced
1 spring onion, thinly sliced on the diagonal
4 button mushrooms, thinly sliced
1/3 cup green peas
1/2 cup roasted cashews
Instructions
- Mix together the soy sauce, sesame oil, lemon juice, sugar, pepper, ginger and garlic in a small bowl.
- Place the remaining ingredients into a large bowl, drizzle the dressing on top, and toss everything together until well combined.
Tips
- You can make this rice salad in advance and store, covered, in the refrigerator. The flavors will improve over time.
Variations
- Add some cold cooked shrimp or chicken to create a main meal.
