Ingredients

2 cups cooked white SunRice rice
500g cashew nuts
4 eggs
1/2 cup tasty cheese
2 large onions
2 small fresh tomatoes
1 teaspoon freshly grated giner
1 teaspoon mixed herbs
Small dab of butter (or oil) for sauteeing

Instructions

1. Chop onions and sautee in butter or oil.

2. Chop tomatoes and add to onions. Sautee a few minutes.

3. Coarsely grind cashew nuts. Put in mixing bowl.

4. Grate cheese and add to nuts.

5 Add cooked rice, eggs, tomato and onion mix and all other ingredients. Mix, adding a little more oil if it seems a little dry.

6. Pat into greased pan and put in oven.

7. Cook for 45 minutes on medium until set and nicely brown on top.

Tips

Add in other ingredients as required or desired.
This recipe is great Christmas lunch for vegetarians.

Variations

Can be served cold with salad.
