Ingredients

  • 4 cups of cooked SunRice Medium Grain rice
  • 30g butter
  • 2 med zucchinis, sliced
  • 1 med onion, sliced
  • 1 1/2 cups milk
  • 1 tblspn plain flour
  • 1/2 cup cream (light if preferred)
  • 1 tspn dijon mustard
  • 425g can tuna in oil, drained
  • 1 cup freshly grated parmesan cheese
  • 1/2 - 3/4 tspns paprika (hot if you like it spicy)

Instructions

  • Grease shallow ovenproof dish (6 cup capacity)
  • Melt butter in medium pan, add onion and zucchini, cook, stirring until onion is soft and lightly browned.
  • Add flour, cook, stirring, until mixture is dry and grainy. Remove from heat, gradually stir in the milk, cream and mustard, stir over heat until mixture boils and thickens, cover, cool.
  • Spoon rice into prepared ovenproof dish, top with flaked tuna.
  • Pour sauce mixture over tuna, sprinkle with cheese and paprika.
  • Bake in moderately hot oven about 30 mins or until lightly browned and hot

Tips

like it Cheesy? Combine other cheeses such as matured, mersey valley or ol' bitey to make 1 cup.
