Ingredients
1/2 cup SunRice Long Grain White Rice
1 litre chicken stock
1 chicken breast, cut into strips or chunks
1 tspn fresh ginger, grated
Fresh coriander, to serve
Instructions
- Bring chicken stock to boil in a large saucepan.
- Add chicken and bring back to the boil.
- Add rice and simmer for 1 hour on low heat.
- Stir through ginger and top with coriander to serve.
Tips
- Stir occasionally to stop rice sticking to the base of the saucepan
Variations
- Chicken can be replaced with fish pieces or mince.
