Ingredients
1 x 250g SunRice Long Grain White Rice in 90 seconds
1 medium tin apricot nectar
1 sachet dehydrated French Onion soup mix
4 chicken thigh fillets, skinless
Instructions
- Place apricot nectar, soup mix and chicken into a casserole dish, stir to combine and cover with a lid. Bake in a moderate oven for 30 minutes or until cooked.
- Once chicken is ready, cook the rice as per the directions on pack.
- Serve apricot chicken on top of the cooked rice.
Tips
- Add whatever vegetables you prefer.
Variations
- To make Tomato Chicken with Rice, replace apricot nectar with 1 medium tin of tomato juice. Add 1 teaspoon of sugar to balance the tartness.

U can place on top apricot halves about 15mins prior to serving, it adds a touch of glamor when you serve it up.
WOW how easy they made it sound every1 loves a quick and yummy meal
I also add a dash of worstershire sauce to the tomato version

This recipe is the same as I already use, it is a lovely meal but I am looking at cutting out the nectar as it has too much sugar, does anyone have any suggestions.Thank you
