Ingredients

1 tspn flour for dusting
1.5kg chicken (cut into 4 portions)
2 tblspn flour
1 1/2 cups fresh orange juice
1/2 tspn salt (omit if on a salt-free diet)
1/4 tspn freshly ground pepper
1 tblspn butter
1/4 tspn cinnamon
1/4 tspn powdered ginger
1/3 cup slivered almonds
1/2 cup raisins
1 orange (cut into segments)
1 Glad Oven Bag

Instructions

  • Dust the inside of oven bag with flour.
  • Place the oven bag in a shallow metal baking dish. Arrange the chicken pieces into the oven bag.
  • Combine the flour with the orange juice and add the salt, pepper, butter, cinnamon, ginger, almonds, raisins and the orange segments and pour over the chicken pieces.
  • Tie bag with twist tie and puncture 3 or 4 holes in top of bag with carving fork at tie end.
  • Bake in moderate oven for 1 hour.

Variations

  • 1.5kgs of lovely legs of chicken can be used instead of 4 portions of the whole chicken.
  • Lemon segments could be used instead of the orange segments and lemon juice substituted for the orange juice.

This tastes beautiful with long grain rice with small bunch of chopped corriander through it and served with an accompaniement of steamed, green runner beans

This recipe is divine and has a beautiful exotic flavour **** It tastes even better if all ingredients are allowed to marinate for two hours in the oven bag within the fridge before cooking.
