Ingredients
8 chicken drumsticks
1 x 450g SunRice Long Grain White Rice in 2 1/2 minutes
2 cups peas
Sauce:
1 tspn sweet chilli sauce
1 tspn soy sauce
3 tblspn honey
2 cups (1 large can) coconut milk
1 heaped desertspoon cornflour
1 desertspoon plain flour
1 heaped tblspn peanut butter
Instructions
- Mix the sauce ingredients together in a bowl.
- Cook chicken in a non-stick frying pan until browned on all sides.
- Lower temperature and slowly pour sauce mixture over chicken.
- Heat slowly until sauce mixture bubbles and chicken is cooked through.
- Cook rice as per directions on pack. Prepare peas.
- Serve chicken with rice and peas.
Tips
- The longer the sauce mixture is in the pan the more it will thicken, so it's best not to leave it in for too long.
Variations
- Any cut of chicken can be used. Adjust quantities and cooking time accordingly.
