Ingredients

  • 2 cups SunRice White Long Grain Rice
  • 1 tblspn olive oil
  • 1 brown onion, chopped
  • 500g beef mince
  • 2 cloves garlic, crushed
  • 3 tspn cumin
  • 1 tspn coriander
  • 1 tspn dried oregano
  • 1/2 tspn chilli flakes
  • 1 green capsicum, seeded and deveined, diced
  • 400g can diced tomatoes
  • 2 tblspn tomato paste
  • 400g can kidney beans, rinse and drained
  • 1/4 cup chopped fresh coriander, plus extra to serve
  • salt, to taste
  • sour cream and diced avocado, to serve

Instructions

  • Heat oil in a large frying pan and cook onion for 5 minutes or until soft.
  • Add beef mince, garlic and spices; cook, stirring to break up mince, until mince is brown. Add capsicum, tomatoes, tomato paste and 1/2 cup water.
  • Bring to a boil, reduce heat and simmer for 20 minutes or until thickened, stirring occasionally. While meat is cooking, cook rice as directed on packet. Add kidney beans to meat sauce and stir to warm through. Stir in coriander. Add salt, to taste.
  • Serve chilli con carne topped with extra coriander leaves, sour cream and avocado. Accompany with rice.

Tips

Serve with guacomole instead of sour cream and avocado.
For convenience, use a sachet of ready prepared Chili Seasoning Mix.
Use SunRice Brown Rice or White Rice in 90 seconds.

I use 400g can 3 bean mix + baked beans for a richer sauce, comes up a treat. Family favourite.

I add more c****pped birds eye chilli with onion and cook off at the start - its great as is but not ****y enough for me
