Ingredients

1 tablespoon olive oil
4 thin slices of prosciutto(cut thinly into strips)
1 Spanish onion
2 garlic cloves
1 teaspoon spices
3 cups of Sunrice Brown Rice
1 cup of shredded mozzarella cheese
2 eggs
Breadcrumbs

Instructions

1. Preheat the oven to 180C.

2. Cook SunRice Brown Rice according to package instructions.

3. Heat oil in a pan and lightly brown a spansh onion. Add prosciutto, garlic and spices, mix well and leave on the side.

4. In a bowl add the cooked SunRice Brown Rice, prosciutto, eggs and mozzarella. Mix all ingredients together and place in a well greased cake dish. Bake on 180C for 25 minutes.

Tips

Place a bit of breadcrumbs at the bottom of the dish so the cake does not stick to the sides.
Serve with salad or meat.
A delicious dish for Christmas.

I have made this a few time and changed the spices around. Also i added Italian herbs. Very nice. I also tried this with halve a cup domio pasta bake/ sundried tomatoo sauce. This was also very nice.It is not Christmas but this recipe can be used all year round.
