Ingredients

1 1/2 cups of rice
2 tbls Peanut Oil
6 Shallots
1/4 cup unsalted peanuts
8 rashers bacon and/or 1 cup Christmas ham
1 onion
1/2 cup leftover roast pork/turkey
1/4 cup of plum sauce
5 Eggs
1 1/4 cups of frozen peas/corn
2 tsp of soy sauce
1 heaped tsp of ginger

Instructions

1. Cook rice according to direction on packet. Fluff and put in fridge.

2. Prep:
Slice shallots
Dice bacon/and or ham and onion
Thaw peas/corn
Beat eggs
Cut up leftover christmas meat and put in plum sauce, refriderate

3. Cooking:
On medium/high setting
Heat 1/2 oil in large high sided frypan
Pour eggs in and shift frypan so covers bottom
Cook until "just" set. Using sharp knife, cut the egg up into small pieces. Remove from pan
Add remainder of oil. Add bacon/ham/onion and cook until onion is soft.
Add cooked rice, peanuts, shallots, peas, corn, cooked egg and stir to combine
Add Left over roast meat stir to combine
Add Soy and Ginger stir to combine
Cook for 2 mins
Reduce heat and stir occasionally for 5min.
