Ingredients

100g SunRice Brown Rice
Olive oil
1/2 green lobster tail, halved
2 cups chicken stock
2 tbs lime juice
1 tbs fish sauce
1 tbs soy sauce
1 red chilli, seeded, sliced
1 green chilli, seeded, sliced
1 tbs finely chopped ginger
1 garlic clove, crushed
4 oyster mushrooms, torn
4 medium spring onions, sliced lengthways

Instructions

1 Cook brown rice according to packet directions, drain.

2 Heat oil in a frying pan over medium heat, cook lobster cut-side down for 3-4 minutes, turn and cook for a further 2 minutes, remove the meat from the shell.

3 Place stock in a saucepan and bring to the boil, reduce to a simmer and add the lime juice, fish sauce, soy sauce, chillies, ginger, garlic and mushrooms, simmer for 5 minutes to let the flavors infuse.

4 Place some rice in the base of a serving dish, top with lobster and pour over the stock, add the spring onions, toss through well. Serve.

Variations

Can also be served with noodles, as in image.
