Christmas Zucchini Quiche with RiceBack

Ingredients
1 Cup wholemeal breadcrumbs
5 small zucchinis
1 small onion
1 clove garlic
1 cup of SunRice Arborio Rice (Cooked)
4 eggs
300ml cream
3 tablespoons powdered parmesan cheese
1 cup grated cheddar cheese
1 tablespoon self raising flour
Salt
Pepper
1 large tomato
Instructions
1. Cook SunRice Arborio Rice according to package instructions and place in a bowl.
2. Spread crumbs over a base of a well greased 25cm flan dish or pie dish (do not use a flat tin with a removable base).
3. Add to the rice, coarsely grated unpeeled zucchinis, chopped onion and crushed garlic, then stir.
4. Add lightly beaten eggs, cream, cheeses and flour to the rice mix and mix well.
5. Season with salt and pepper.
6. Spoon gently over crumbs in a well greased flan dish.
7. Top with a sliced tomato.
8. Bake in a moderate oven for 45 minutes

took out zuchinis added equal amounts of grated carrot and potato **** and a couple rashers of bacon(lightly cooked first)
cooked this yesterday added some shreded ham delicious husband took it cold to work today **** will make again

Made as per the recipe. Delicious with salt and pepper to taste. Excellent dish on those occasions when you have unexpected guests.
