Ingredients
1/4 cup oil
1 cup chopped onion
1 tablespoon minced garlic
2 teaspoons minced fresh ginger
2 tablespoons coriander
1/4 teaspoon cumin
1/4 teaspoon cinnamon
1/8 teaspoon cayenne
1/8 teaspoon turmeric
1 cup drained canned tomato
1 cup coconut milk
1/2 cup water
1 teaspoon salt
1 kg large shrimp, peeled and cleaned
3/4 cup fresh cilantro
SunRice Coconut Rice
2 coconuts to serve
Instructions
1. Heat oil in lg skillet on med-hi heat, add onions and stir cook for 3 minutes.
2. Add garlic and ginger,cook 2 minutes, then add next 5 spices, cook 1 minute.
3. Add tomatoes,cook 1 minute then add coconut milk, water, and salt, and bring to a simmer.
4. Simmer until thickened 5-10 minutes.
5. Add prawns, simmer, stirring for 5 minutes, then stir in cilantro.
6. Microwave SunRice Coconut Rice in 90 seconds according to packet instructions. Serve in half a coconut.
Variations
Can be served without the coconut but for Christmas time the coconut shell looks more special.
