Ingredients
Marinade:
- 3 x garlic cloves smashed
- 1/4 tsp pepper
- 3 slices of garlic pounded lightly
- 1 tsp sugar
- 1 tbsp sesame oil
- 1 tsp cornflour
- 3 chinese mushrooms soaked and sliced thinly
- 1 tbsp oyster sauce
- 2 cups Jasmine rice
- 3 chicken thigh fillets
- Spring onion, chives or shallots to garnish
Seasoning (mixed together)
- 1 tsp soy sauce
- 1 tsp sugar
- 1/4 tsp pepper
- 1/2 tsp chicken stock granules
- 1 tsp sesame oil
- 1/2 tsp dark soy sauce
Instructions
- Combine marinade ingredients together and marinade chicken thigh with it. Best if done overnight. Otherwise, Marinate for two hours in the fridge.
- Cook rice as per instructions on pack and set aside to cool for a bit.
- Fill the claypot up to two-thirds with rice and pour chicken and marinade over the top. Pour seasoning mixture evenly over rice and cover lid.
- Put claypot over gas stove and cook on high heat for approximately 15 minutes or until chicken is cooked.

Tips
Serve hot and garnish with shallots
If you have no gas stove, use the oven instead. Make sure you preheat the oven first to 180 degrees Celcius.
