Ingredients
3 cups cooked SunRice Medium Grain Brown Rice
4 spring onions, chopped
1 red capsicum, diced
1 cup frozen peas, thawed
1/4 cup chopped fresh parsley
1/4 cup white wine vinegar
2 tblspn extra virgin olive oil
Salt & freshly ground pepper to taste
Instructions
- Combine rice, spring onions, capsicum, peas and parsley in a large bowl.
- Whisk vinegar with oil in a small bowl. Season with salt and pepper.
- Add to the salad and toss to coat.
Variations
- Use 1 x 450g pack SunRice Fragrant Brown Rice in 2 1/2 minutes as an easy substitute for cooked brown rice.
