Ingredients

1 1/2 cups cooked Sunrice Basmati rice
1 1/2 cups cooked wild rice
1 cup dried cranberries
3/4 cup slivered almonds
2 shallots
1/2 cup chopped corriander
1 T grated ginger
1/2 cup fresh orange juice
1 T extra virgin olive oil

Instructions

1. Combine both rices, cranberries, almonds and shallots in a large bowl.

2. Combine ginger, organge juice and oilve oil. Drizzle over rice and toss to coat. Season with salt and pepper.

Note: Wild rice takes 45 mins to cook.

Tips

Wild rice takes 45 mins to cook. For this recipe about 2/3 cup wild rice raw and 1/2 cup raw basmati.

Variations

Add shredded BBQ chook meat.
