Ingredients

1 cup of white long grain rice
1 tblspn of curry powder
1 cup of frozen peas and corn kernels
1 carrot grated
1/2 capsicum chopped
1/2 cucumber sliced
1 cup of peanuts

DRESSING

1/2 cup of French dressing
1 tspn of curry powder
1 tblspn of lemon juice
1 tblspn of brown sugar

Instructions

  • Cook the rice in water to which curry has been added. Cook until soft. Allow to cool then strain the rice.
  • Cook the peas and corn and also allow to cool. Once rice has cooled add other ingredients and blend well.
  • To make dressing, place all ingredients into jug and shake well.
  • Pour over salad and allow to soak through.

Tips

  • You may only need to use half the dressing.

Variations

  • You may also add other vegetables if you desire.
