Ingredients
2 cups cooked SunRice Medium Grain White Rice
2 eggs, lightly beaten
1 tspn fresh ginger, grated
1/2 onion, finely sliced
1/2 cup chopped ham or bacon
1/2 cup cooked peas
1/2 cup corn kernels
4 spring onions, finely chopped (green part only)
2 tblspn soy sauce
4 tblspn vegetable oil
Instructions
- In a frypan heat half the oil and cook eggs as a flat omelete. Remove and chop into thin strips.
- Heat remaining oil in the frypan, add ginger, onion and ham/bacon. Fry until onion is soft.
- Add rice, peas and corn kernels. Stir fry for about 4 minutes.
- Add omelete strips, spring onions and soy sauce and heat through..
- Let cool and enjoy!
Variations
- SunRice Brown Rice can be used instead of white for a healthier option.
- Ham/bacon can be ommited for a vegetarian option.
