Ingredients
2 cups SunRice Long Grain White Rice
1 chicken breast fillet, diced
1 red onion, diced
1/2 red capsicum, diced
1/2 green capsicum, diced
1/2 yellow apsicum, diced
1 Chorizo sausage, sliced
1 large fillet white fish, diced
6 cups chicken stock
5-6 large green prawns, peeled and de-veined
1 cup frozen peas
Instructions
- Par-cook rice for 4 minutes rapidly in boiling water.
- Fry chicken and onion in a splash of good olive oil for a few minutes.
- Add capsicum, sausage and fish
- Add par-cooked rice and stock. Leave covered and simmering for approximately 20 minutes.
- Add prawns and peas. Cook for another 5 minutes or so until prawns and rice are cooked.
Variations
- Add whatever vegetables you want
- Add washed Mussels
- For a dinner party or special occasion add (expensive but delicious) Saffron

I will take out sausages add more prawns and use vegie stock for Good Friday.
