Rice Pudding with Strawberries & Cream Back

Ingredients
- 1 x 250g SunRice Arborio Risotto Base
- 2 cups thick vanilla custard
- 4 tblspn caster sugar
- 1 punnet strawberries
- 4 tblspn mascarpone or whipped cream
Instructions
Microwave SunRice Arborio Risotto Rice in 90 seconds as per pack instructions. Place into a bowl to slightly cool. Add custard and mix together. Pour mixture into 4 ovenproof dessert dishes (ramekins) and refrigerate. Just before serving sprinkle with sugar, caramelise the sugar with a kitchen torch or by placing the ramekins under a hot grill. Serve with fresh strawberries and mascarpone or whipped cream.
Tips
Use a 160ml ramekin.
Apply even heat for sugar to caramelise.
Variations
Try with chocolate custard and mix in some raspberries.
