Ingredients

• 1 x 450g SunRice Family Pack Long Grain Microwave Rice
• 3 hard boiled eggs, roughly chopped
• 1 clove of garlic
• 1-2 Red Onions finely chopped
• 1 bunch of shallots finely chopped
• 2-3 cups of Spanish olives finely chopped
• 2 red capsicums finely chopped
• 2-3 cups of mayonnaise or yogurt

Instructions

• Microwave SunRice Family pack long Grain rice as per pack instructions
• Combine rice with garlic, olives, capsicum and eggs in a bowl.
• Add mayonnaise mix together
• Serve

Variations

2-3 cups of chopped cooked bacon or chicken
Omit olives and add prawns some herbs, dill etc
