Ingredients

1 tblspn onion, finely sliced
3/4 cup cooked rice (left over)
1/4 cup mixed cooked vegetables (left over)
1 tomato seeded and chopped
1 tblspn olive oil
2 beaten eggs

Instructions

  • Panfried the onion with butter or oil. Add rice for two minutes, then add mixed vegetables, tomato, salt and pepper, and stir in the pan for txo more minutes. Put mixture aside.
  • In the same frypan, add half the oil and cook 1 egg first on medium heat until set. Do not over cook.
  • Slide the omelete on to a piece of plastic film.
  • Do the same with the other egg.
  • Place the rice/vegetable mixture in the centre on the omelete and fold them, using the plastic film.
  • Ready and ideal for the lunchbox.
