Ingredients
- 1 x 250g packet SunRice Thai Style Coconut Rice in 90 seconds
- 2 tbsp olive oil
- 2 x 180g firm white fish fillets
- ¼ cup dukkah spice
- Steamed snow peas to serve
Instructions
Yoghurt Dressing
- 125g plain yoghurt
- 1 Lebanese cucumber, diced
- 1 tsp lemon juice
- ¼ tsp ground cumin
- 1 tbsp coriander, chopped
- Coat the fish in dukkah
- Cook in oil a non stick pan over medium heat for 3 minutes each side
- Combine yoghurt, cucumber lemon, cumin and coriander. Set aside
- Microwave rice as per pack instructions and serve meal
