Ingredients

  • 1 x 250g packet SunRice Thai Style Coconut Rice in 90 seconds
  • 2 tbsp olive oil
  • 2 x 180g firm white fish fillets
  • ¼ cup dukkah spice
  • Steamed snow peas to serve

Instructions

Yoghurt Dressing

  • 125g plain yoghurt
  • 1 Lebanese cucumber, diced
  • 1 tsp lemon juice
  • ¼ tsp ground cumin
  • 1 tbsp coriander, chopped
  • Coat the fish in dukkah
  • Cook in oil a non stick pan over medium heat for 3 minutes each side
  • Combine yoghurt, cucumber lemon, cumin and coriander. Set aside
  • Microwave rice as per pack instructions and serve meal
