Ingredients
1/2 cup SunRice Medium Grain White Rice
600ml milk
1/2 cup cream
1/3 cup sugar
grated zest of 1 lemon
Instructions
- Place the rice into a saucepan with the milk and lemon zest. Bring to the boil, reduce heat then simmer, covered, for 30 minutes or until the rice is tender and all the milk has been absorbed.
- Stir frequently to prevent the rice sticking to the base of the saucepan.
- Remove from heat, stir in the cream and sugar and serve with a spoonful of ice cream. Garnish with a slice of lemon and a fresh mint leaf.
Tips
- Stir frequently to prevent the rice sticking to the bottom of the saucepan - and if you have a heavy copper-base pan, use that one!
Variations
- Use orange rind instead of lemon, then garnish with a slice of orange.

i wonder if it were possible to cook this in a rice cooker. i know that using a slow cooker makes beautiful creamed rice..
