Ingredients
1 x 450g SunRice Basmati Rice in 2 1/2 minutes
1 onion, chopped
1 tblspn oil
1/2 tspn cinnamon
1 tspn chicken stock powder
1/2 cup diced dried apricots
1/2 cup slivered almonds
coriander to garnish
Instructions
- Brown onions in oil and stir through cinnamon and chicken stock powder.
- Cook rice per directions on pack.
- Add rice, apricots and almonds to the onions and cinnamon. Mix until combined.
- Serve garnished with coriander on top.
Variations
- Add prunes along with or instead of apricots.
- Add cayenne powder for extra spiciness.
- Replace chicken stock with vegetable stock for vegetarian option.
