Ingredients
3 cups cooked Sunrice Brown Rice
300g pork mince
4 rashers bacon, diced
1 chorizo sausage, sliced thinly
1 onion, chopped
1/2 cup frozen corn
1/2 red capsicum
1/2 green capsicum
1/2 can kidney beans, drained
1 tblspn soy sauce
Instructions
- Fry pork mince in a little oil until cooked. Set aside.
- Fry bacon, chorizo sausage, onion and capsicums until cooked.
- Add corn, kidney beans, cooked rice, soy sauce and cooked mince to the bacon mixture. Stir until combined and heated through. Serve with a drizzle of sweet chilli sauce.
Tips
- Quick and easy - prepare ingredients early and just throw together when needed.
- Serve either as a side dish with chicken kebabs or as a meal on its own.
Variations
- You can use other types of mince or even put in chopped chicken, beef or lamb.
- Other vegies like peas, sliced beans or chopped carrot can be added.
