Ingredients
- 1 cup basmati rice
- 4 large pappadums
- 1 tblspn vegetable oil
- 1 small red onion, chopped
- 1/2 small red capsicum, chopped
- 1 tspn grated lemon rind
- 2 tblspn lemon juice
- 185g can Ayam Curry Tuna
- 1 bunch rocket leaves, trimmed
Instructions
Cook rice according to instructions on the packet. Fry or microwave pappadums according to instructions on the packet. Meanwhile, heat oil in a non-stick frying pan, add onion and capsicum, stir-fry for 2 minutes or until tender. Add rice, lemon rind and juice and stir until hot. Add tuna and stir gently until just combined. Serve with rocket leaves and pappadums.
