Ingredients

  • SunRice Long Grain Rice

(cook as per pack instructions)

  • 4 tblsps vegetable oil
  • 8 x 80g beef medallions, tender lean beef fillet or scotch fillet
  • 2 tblspn butter
  • 4 garlic cloves, sliced
  • salt and pepper to taste
  • 160g tomato chutney

Instructions

Heat oil in a frying pan. Season beef medallions then cook in heated pan to your liking, remove from pan and set aside. Place butter and garlic into pan, cook gently over low heat.SunRice Long Grain Rice as per pack instructions. Add to pan and stir for 1 minute until well rice is coated. Place rice onto a plate and place beef on top. Spoon on the tomato chutney.

Tips

Adjust garlic quantity according to taste.

Variations

Substitute beef medallions for chicken breast fillet (allow extra cooking time for chicken).
