Ingredients

  • 1 cup quinoa
  • 2 cups SunRice 90 seonds Long Grain rice
  • 1/3 cup fat-free balsamic salad dressing
  • 1/4 cup pitted kalamata olives
  • 100g reduced fat fetta, crumbled
  • 2 Lebanese cucumbers, chopped
  • 2 tomatoes, diced
  • 1 green or yellow capsicum, diced
  • 1 cup flat-leaf parsley, roughly chopped
  • 1/4 cup fresh dill, chopped
  • 6 iceberg or cos lettuce cups
  • pepper

Instructions

  • Place quinoa in a pot, add enough water to cover it.
  • Bring to the boil and simmer for 20 min or until tender. Drain well and allow to cool at room temperature.
  • Combine olives, fetta, cucumbers, tomatoes, capsicum, pasley, dill, balsamic dressing
  • Fill mixture in to lettuce cups and serve.

Tips

Garnish with extra parsley if desired.
