Ingredients
- 1 cup quinoa
- 2 cups SunRice 90 seonds Long Grain rice
- 1/3 cup fat-free balsamic salad dressing
- 1/4 cup pitted kalamata olives
- 100g reduced fat fetta, crumbled
- 2 Lebanese cucumbers, chopped
- 2 tomatoes, diced
- 1 green or yellow capsicum, diced
- 1 cup flat-leaf parsley, roughly chopped
- 1/4 cup fresh dill, chopped
- 6 iceberg or cos lettuce cups
- pepper
Instructions
- Place quinoa in a pot, add enough water to cover it.
- Bring to the boil and simmer for 20 min or until tender. Drain well and allow to cool at room temperature.
- Combine olives, fetta, cucumbers, tomatoes, capsicum, pasley, dill, balsamic dressing
- Fill mixture in to lettuce cups and serve.
Tips
Garnish with extra parsley if desired.
