Ingredients

  • 2 cups SunRice Doongara Clever Rice
  • 2-3 tblspn oil
  • 2 zucchini, sliced lengthways
  • 2 baby eggplants, sliced lengthways
  • 2 onions, sliced
  • 2 red capsicums, sliced
  • 250g button mushrooms, sliced
  • 2 tblspn Basil pesto to serve

Instructions

  • Cook rice as per directions on pack.
  • Once rice is cooked, remove pan from heat and cover to keep warm, while vegetables are cooking.
  • Toss sliced vegetables with oil and grill, barbecue or panfry until just tender(approximately 2-4 mins).
  • Toss vegetables with rice

Tips

  • For a flavoured rice use beef stock instead of water when cooking the rice.
  • For added convenience, use SunRice Long Grain White Rice in 90 seconds.

Variations

  • Add any combination of vegetables and different flavoured pestos to create different meals.
