Ingredients
- 2 cups SunRice Doongara Clever Rice
- 2-3 tblspn oil
- 2 zucchini, sliced lengthways
- 2 baby eggplants, sliced lengthways
- 2 onions, sliced
- 2 red capsicums, sliced
- 250g button mushrooms, sliced
- 2 tblspn Basil pesto to serve
Instructions
- Cook rice as per directions on pack.
- Once rice is cooked, remove pan from heat and cover to keep warm, while vegetables are cooking.
- Toss sliced vegetables with oil and grill, barbecue or panfry until just tender(approximately 2-4 mins).
- Toss vegetables with rice
Tips
- For a flavoured rice use beef stock instead of water when cooking the rice.
- For added convenience, use SunRice Long Grain White Rice in 90 seconds.
Variations
- Add any combination of vegetables and different flavoured pestos to create different meals.
