Ingredients

Jambalaya:

  • 2 cups cooked SunRice White Medium Grain Rice
  • 2 tblspn vegetable oil
  • 480g diced chicken (thigh fillet or breast filet)
  • 240g chorizo sausage sliced
  • 1 tspn crushed garlic
  • 1 medium sized onion sliced
  • 1 medium sized red capsicum sliced
  • sticks of celery sliced
  • 4 tblspn tomato paste
  • 2 cups of chicken stock or water
  • salt to taste

Cajun seasoning:

  • 1 tspn cayenne pepper
  • 1 tspn ground white pepper
  • 1 tspn ground black pepper
  • 1/2 tspn oregano
  • 1/2 tspn thyme
  • 2 bay leaves

Instructions

Mix all ingredients for seasoning together. Heat oil in a saucepan, add chicken and brown slightly then add sausage. Add vegetables and gently cook for 2-3 minutes. Sprinkle in 1 1/2 tspn of the seasoning and stir. Add tomato paste and pour in the stock. Simmer until chicken and vegetables are cooked. Add the rice and serve.

Tips

You may use a ready prepared Cajun spice mix.
