Ingredients
Jambalaya:
- 2 cups cooked SunRice White Medium Grain Rice
- 2 tblspn vegetable oil
- 480g diced chicken (thigh fillet or breast filet)
- 240g chorizo sausage sliced
- 1 tspn crushed garlic
- 1 medium sized onion sliced
- 1 medium sized red capsicum sliced
- sticks of celery sliced
- 4 tblspn tomato paste
- 2 cups of chicken stock or water
- salt to taste
Cajun seasoning:
- 1 tspn cayenne pepper
- 1 tspn ground white pepper
- 1 tspn ground black pepper
- 1/2 tspn oregano
- 1/2 tspn thyme
- 2 bay leaves
Instructions
Mix all ingredients for seasoning together. Heat oil in a saucepan, add chicken and brown slightly then add sausage. Add vegetables and gently cook for 2-3 minutes. Sprinkle in 1 1/2 tspn of the seasoning and stir. Add tomato paste and pour in the stock. Simmer until chicken and vegetables are cooked. Add the rice and serve.
Tips
You may use a ready prepared Cajun spice mix.
