Ingredients

  • 1 x 125g SunRice Quick Cups Brown Rice in 40 seconds per person
  • 300g swordfish steak, cut into chunks
  • 1/2 red capsicum, cut into chunks
  • 1/2 yellow capsicum, cut into chunks
  • 2 tblspn sweet soy sauce
  • 1 bunch coriander, chopped
  • 1 bunch chives, chopped
  • 2 tblspn roasted cashew nuts, chopped

Instructions

Thread the fish and capsicum onto skewers. Microwave SunRice Quick Cups Brown Rice in 40 seconds as per pack instructions. Cook fish in a hot non-stick pan, then brush over with the soy sauce. Combine rice with the herbs and cashew nuts. Divide herb rice between serving plates and top with kebabs. Serve immediately and enjoy.

Tips

Kebabs can be cooked over a hot grill or BBQ. Soak wooden skewers to stop them burning.

Variations

Other firm fish such as tuna, salmon, snapper or ling can be used in place of the swordfish.
