Ingredients
1 cup of SunRice basmati rice
2 chicken breats, diced
2 carrots, shredded
1 zucchini, shredded
1/2 cup corn kernals
1 cup of bacon pieces
3 Eggs
3 tbs soy sauce
1 cup of water
Instructions
1. Boil rice for roughly 15 mins strain and add soy sauce leave to sit.
2. Make omlettes with the 3 eggs remove and break into pieces.
3. Fry the chicken and bacon for a few minutes then add carrot, zucchini, corn with water.
4. Boil roughly 5 mins then cover with rice allowing water to absorb.
5. Add egg pieces and serve.
Tips
Perfect for the kids at Christmas.
Shredding vegetables make them a bit less daunting for kids and the pieces can be easily eaten with rice.
