Ingredients
- 1 x 250g packet SunRice Roasted Vegetable Brown Rice in 90 seconds
- 60ml olive oil
- 1 clove garlic, finely chopped
- Pepper & sea salt to taste
- 1 tsp rosemary, chopped
- 3 tbsp parsley, chopped
- 2 tsp grated lemon zest Juice of 1 lemon
- 6 lamb cutlets
Instructions
Cherry Tomato and Feta Salad
- 125g cherry tomatoes, halved
- 1 red onion, diced
- 1 tbsp parsley, chopped
- Pinch pepper
- 30g Persian feta
- Combine olive oil, garlic, salt, pepper, rosemary, parsley, lemon zest, lemon juice and lamb cutlets in a bowl
- Fry lamb cutlets over high heat for about 2 minutes on each side
- Combine cherry tomatoes, parsley, red onion and pepper
- Microwave rice as per pack instructions. Serve meal
