Ingredients

  • 1 x 250g packet SunRice Roasted Vegetable Brown Rice in 90 seconds
  • 60ml olive oil
  • 1 clove garlic, finely chopped
  • Pepper & sea salt to taste
  • 1 tsp rosemary, chopped
  • 3 tbsp parsley, chopped
  • 2 tsp grated lemon zest Juice of 1 lemon
  • 6 lamb cutlets

Instructions

Cherry Tomato and Feta Salad

  • 125g cherry tomatoes, halved
  • 1 red onion, diced
  • 1 tbsp parsley, chopped
  • Pinch pepper
  • 30g Persian feta
  • Combine olive oil, garlic, salt, pepper, rosemary, parsley, lemon zest, lemon juice and lamb cutlets in a bowl
  • Fry lamb cutlets over high heat for about 2 minutes on each side
  • Combine cherry tomatoes, parsley, red onion and pepper
  • Microwave rice as per pack instructions. Serve meal
