Ingredients

1 x 250g SunRice Basmati Rice in 90 seconds
2 tblspn crunchy peanut butter
2 tspn soy sauce
4 tblspn hot water
2 bok choy, boiled and drained
1/2 green or red capsicum, chopped
2 tblspn vegetable oil
2 tspn soy sauce, extra
2 tspn oyster sauce
300g whole lamb fillet

Instructions

  • To make the satay sauce, mix together peanut butter, 2 teaspoons soy sauce and hot water.
  • Stir fry bok choy and capsicum in 1 tablespoon vegetable oil. Add extra soy sauce and oyster sauce. Set aside and keep warm.
  • In a fry pan, add remaning 1 tablespoon oil and pan fry the lamb fillet. Cut fillets into bite-sized pieces and stir through satay sauce.
  • Cook rice as per directions on pack.
  • Serve satay lamb with basmati rice and stir fry vegetables.
