Ingredients
1 cup SunRice Basmati Rice
1 medium size onion, finely chopped
1/3 cup peas
1/3 cup corn kernels
1/3 cup beans, cooked
1/3 cup carrots, cooked
1/3 cup cauliflower florets, cooked
2 tblspn butter
1 3/4 cups vegetable stock
1 tspn sesame oil
Instructions
- Melt the butter in a large saucepan. Add the onion and cook for 3-4 minutes until slightly soft
- Add the rice and stir for about 3 minutes.
- Add all vegetables and stir.
- Add the stock, stir and bring to the boil.
- Place lid on the saucepan and reduce heat to the lowest level.
- Cook over a VERY low heat for 15 minutes, then remove the pot from the heat and let stand for 10 minutes.
- Remove lid and stir through sesame oil. Serve.
Tips
- It is vital that the lid is NOT removed for any reason while cooking.
Variations
- Let your imagination run wild. Cooked cold meat works well in it as does prawns.
- Any combination of vegetables can be used.
