Ingredients

  • 2 x 250g SunRice Mediterranean Style Tomato Rice in 90 seconds
  • 400g lean beef or veal mince
  • 200g ricotta
  • 1 egg
  • 1 tspn dried oregano
  • sea salt and black pepper to taste
  • 800ml tomato puree
  • 200ml water or stock
  • 2 tspn brown sugar
  • 2 tspn smoked paprika
  • 1/4 cup freshly chopped parsley
  • parmesan cheese to serve

Instructions

Mix together mince, ricotta, egg, oregano, salt and pepper in a large bowl. Roll into bite size meatballs. Heat tomato puree, water or stock, sugar and smoked paprika in a pot until it comes to the boil. Drop in the meatballs, cover and simmer for 5 minutes until cooked. Microwave SunRice Mediterranean Style Tomato Rice in 90 seconds as per pack instructions. Divide rice between serving dishes and top with the meatballs and sauce. Garnish with fresh parsley and parmesan.

I tried this last night it was tasty, but more suited making if you are going camping etc, and want a hot tasty meal to take along.

I've eaten this and it comfortably feeds 3 pretty hungry men - I think it would feed 6 to 7 kids...10 times the cooking wouldn't be impossible but will still be a bit tricky!!!....and needs a big pan!

So quick and easy to make! Couldn't find rice recommended, so had to use alternative, which worked well nevertheless. Threw shredded cheese on instead of parmesan and it was just awesome. Will definitely make again. Thanks!!!

I tried this recipie last night.it's a winner. thank you. the down side I couldn't get you're product, I had to subtitute.with another brand.will try it again with yours.thank's again.
