Ingredients
Salad:
- 2 cups cooked SunRice Medleys
- 480g cooked peeled prawns
- 1 avocado, sliced
- 1 medium size cucumber cut into half and sliced
- 1 red onion sliced
- 1 punnet cherry tomatoes
- 1/4 bunch fresh mint roughly chopped
- 1/4 bunch fresh coriander
Dressing:
- 4 tblspn fish sauce
- 2 tblspn soy sauce
- juice of 1 lime
- 2 tspn sesame oil
- 1/2 deseeded sliced red chilli
Instructions
In a small bowl mix together all dressing ingredients. In a large bowl combine all other ingredients. Pour the dressing over and toss together.
Tips
For more heat increase the amount of chilli.
Variations
You could use flaked salmon or tuna instead of prawns.

I thought this dish was absolutely delicious, hubby found the mint a bit strong I will be making it again (I didn't have Jasmine rice medlys I used basmati instead - great)

I loved this recipe, the flavours were amazing. I used basmati rice instead and spring onions instead of red onion. can't wait to make it again
