Ingredients

  • 1x 250g Pouch of SunRice Aborio Risotto Base in 90 secs
  • 1 small can red kidney beans
  • 2 tomatoes diced or 8-10 cherry tomatoes cut in half
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 4 tblspn sweet chilli sauce
  • salt and pepper to taste
  • 320g chicken thigh fillets or breast fillet
  • 1 tspn smoked paprika
  • salt and pepper
  • 4 large/8 small flour tortillas
  • 1 lettuce (green oak, butter, iceberg)

Instructions

In a bowl mix together heated rice, beans, tomato, onion, avocado and sweet chilli sauce, season with salt and pepper. Season chicken with paprika, salt and pepper and grill on the barbeque until cooked, set aside and slice. Place lettuce on top of the tortillas then add rice mixture and top with chicken.

Tips

For extra convenience use SunRice Medium Grain White in 90 seconds.
