Ingredients
- 2 x 250g SunRice Roast Flavoured Chicken Microwave rice
- 4 chicken breasts
- 3 heaped tablespoons Moroccan Spice mix
- 1 tablespoon oil
- 1 onion,
- 2 cloves garlic, peeled
- 1 teaspoon cumin powder
- 2 large carrots, peeled and sliced into thick pieces
- 2 tablespoons honey
- 1 chicken stock cube,
- �½ cup green olives stuffed with pimentos,
- 1/3 cup lemon juice
Instructions
- Cut slits into the chicken breasts, moisten with some of the lemon juice then rub the Moroccan spice mixture into the slits and all over the chicken using all the spice mixture. Marinate for 15 minutes.
- While chicken is marinating slice the onion into rings and chop the garlic finely.
- Heat 1 tablespoon of oil in a large pot, add the onions and cook until soft, add the garlic and cook for a further 5 minutes.
- Add the chicken into the pot with all the spice mixture, cumin powder, carrots and the honey, cover chicken breasts with boiled water and then crush in the stock cube, stir to combine. Bring to the boil then simmer for 20 minutes.
- Add the olives and lemon juice and cook for another 10 minutes.
- Microwave SunRice Roast Flavoured chicken rice as per pack instructions
