Warm Moroccan Rice SaladBack

Ingredients
1 cup SunRice Medium Grain Brown Rice
250g cherry tomatoes
2 sweet potatoes
1 bunch broccolini
1 red onion
1 1/2 tspn Moroccan Seasoning (store bought)
2 tblspn balsamic vinegar
Instructions
- Preheat Oven to 180 Degrees
- Cook rice as per directions on pack. Once cook, set aside and keep warm.
- While the rice is cooking, peel sweet potatoes, and cut into 1cm sqaure pieces. Place on a greased tray and cook for 10 minutes.
- Meanwhile, cut the red onion into wedges. Place on tray with potatoes, and cook for further 10 minutes
- Halve the cherry tomatoes and place on tray with onion and potatoes. Cook for final 10 minutes.
- Cut up bunch of broccolini, and microwave in a covered dish for 2-3 minutes or until tender. Once broccolini is cooked, keep warm.
- Add the Moroccan Seasoning to balsamic vinegar, and mix thoroughly, in a small bowl.
- Once the potatoes and other vegetables have finished cooking, take out of oven and add to warm rice. Add broccolini, dressing and toss untill mixed. Serve.
Tips
- Please note that more Moroccan seasoning may be added if desired.
Variations
- Use pumpkin instead of Sweet Potato (I like sweet potato better though).
